Growing up when dinner-time came around we didn't just fend for ourselves and eat. We came together and would sit down at the table together, a tradition we still do to this day. However, now on my own I find myself longing for the home-cooked meals (and family memories) from the dinner table. My mom is always a cooking inspiration for me, and so why not share some of our delicious recipes with others? Food should be shared, not horded!

Homemade Pizza Pie
Who doesn't love a good pizza now and then? I know I do!! My mom and I have made homemade pizza together a few times now, and it's always a fun family experience! Plus you can individualize each one just the way you want! At home we have a pizza stone we make our pizza on, but I lack that here so I improvised and used a pizza sheet. I also cut the recipe in half since I was cooking just for me. White Kidney Bean Hummus
I never was a big fan of kidney beans growing up. My mom said that when she'd make her bean salad we'd pick out all the kidney beans. Also we would do the same when she made her chili. But when she switched to white kidney beans it was alike a transformation and we began to eat them. I'm not sure why (mom claims it was just the texture of the red beans we didn't like) but who knows. That aside, I wasn't a fan of hummus until later in life, but now I love it! My mom swears she's made homemade hummus for us before, but I have no recollection of it. Either way, I decided to make a batch of her hummus and it turned out quite delicious!

Baked Potato Chips
My dad is an Irish man, and so one thing that he LOVES is potatoes! I'm pretty sure if it were up to him EVERY meal would have potatoes of some form with it. My mom is pretty good with rotating what our sides are, but one thing I do remember her making a lot are homemade Frenchfries. Now what does this have to do with potato chips you ask? Well, recently I realized that I needed to use up a few left over potatoes, but had no idea what to make. I was going to make french fries, but then decided last minute, why not chips?! My mom has made homemade potato chips before, and they alway tasted delicious, so why don't I try my own recipe? Thus, my baked potato chips came to be! They're pretty simple to make and you can zest them up however you'd like!

Summer Time Cucumber and Tomato Salad!
Sorry for the low picture quality, but I lack an actual camera and all that fancy stuff so I just use my good ol webcam! That aside...
Growing up I was subject to a wide variety of foods, some I liked and others I didn't. However, I have always been one to like healthy snacks. My mom would make us sliced apples and cheese, or crackers with some sort of dip. Either way, I've always been one to love fruits and veggies. One thing I always tell my mom is that I miss our garden! When we used to live in Michigan, we had a small backyard, but in the corner my mom had a vegetable and sunflower garden, so we always had fresh veggies.
