A Little Hello
Time to get started, I suppose. First off, this probably won't be a daily blog style, more of a post as I can due to my schedule, but hopefully it'll give you a nice taste of the meals and desserts I've happily grown up with. As well as learning the ropes of how to work the blog...Be on the lookout as I'm sure formatting will continue to change.I hope to use this as a place to share some good recipes with others and learn to improve upon my own cooking skills! After all, the best way to learn is by doing, correct? As an Occupational Therapist I will say, it is important to engage in occupations that we find interesting and meaningful to help improve our everyday quality of life! It just so happens, for me, I am interested in cooking/baking, and writing (So kill two birds with one stone here!). With that all said, I welcome you here, and hope you can find a recipe or two that you throughly enjoy (and can put your own spin on). Happy food hunting :)

Homemade Mac N Cheese

Who doesn't like the classic taste of Mac n Cheese? Brings back childhood memories for me! Plus you can soup this up any which way you want. Here I'll give you a simple recipe for a run of the mill mac n cheese. Once more I tend to come up with these recipes with whatever I happen to have on hand. This time I found myself wanting to cook something quick after a VERY long work day! With my mom gone (since I am currently back home for a stent) I had to fend for myself! Poor me, right? haha. Well, I decided for a simple, quick meal of mac n cheese. So here's what I did!

Ingredients
Macaroni noodles (or really whatever noodles you wish to use)
Milk 
Cheese
Butter 
Salt/Pepper

Assembly
I start with of course preparing the noodles according to the box. Drain and rinse the noodles and return them to the pan (make sure the burners are off!). Add a little more than 1/4 a cup of milk, about 1 tbsp of butter, and couple handfulls of shredded cheese (your choosing). Turn the burner on to low and start to mix everything together. Keep mixing until the cheese begins to melt. If needed add more milk to keep the cheese mixture creamy instead of stringy. Add cheese to your liking and keep mixing until you get the cheesy consistency you wish! It's as simple as that. I generally add a little salt/pepper for taste as well.

Final Thoughts
A very SIMPLE and quick recipe that you can jazz up however you'd like  I added some queso dip and spicy sausage to my last batch of mac n cheese! Add different flavors and mixtures to create a lovely dish and jazz up your mac n cheese! Have fun and be creative! Just remember to enjoy yourself and have happy eats! :)

  1. When I was little I HATED mac and cheese (unless my mom mixed in a lot of peas, haha, I have always been weird!) Now I love it. I will have to try this recipe.
